ASCII/HTML coding

I keep running into an issue with editing my pages. I use a lot of foreign writing (German & Japanese romanji, kanji & katakana/hirigana) and find that the edit fields will take my coding and replace it with the actual symbol. Which means I have to rewrite everything again everytime I edit. Is there a way I can avoid this? Not a big deal, really, just more of an inconvenience as I don't have the whole ASCII table memorized...just the estett. ^.^

Also, does anyone know anywhere to format kanji into numeric html coding? I can do katakana/hiragana but haven't found a source for the kanji. Again, I can do a cut & paste job, but the edit field will sometimes kick it out if I re-edit the page...

I also can't edit my Blog entries.
